Mushroom Stroganoff

Life can be hectic, long days at work… maybe you have kids. If your like me then the thought of what to make for dinner can be so stressful, and being a vegetarian does NOT help the situation.

However I stumbled across a delicious ‘Mushroom Stroganoff’ recipe, its soooooo quick and sooooooo yummy.


All you need is:

  • 1tbsp olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 500g mushrooms, sliced or diced
  • 50ml vegetable stock
  • 1tsp smoked paprika
  • Black pepper
  • Himalayan pink salt
  • 3tbsp sour cream
  • 4tbsp fresh chopped parsley

IMG_5334Step 1: Chop mushrooms, onion and garlic.

Step 2: Heat olive oil in pan and add: mushrooms, onion and garlic


Step 3: Let cook for 5 – 10 mins, then add paprika, vegetable stock, pepper and salt

– while this cooks start making rice-
Step 4: Before serving add sour cream and parsley, mix through
Add over rice

It is really quick and amazingly satisfying.
